Menu Monday

This week, I am accepting a challenge in my Sunday School Class, "The Fishermen", are going to give up one luxury and put a monetary value on it then after one week, we will give the money to God's work. My "luxury" is going to be eating out. I have found that summer makes it so much easier to avoid cooking...so many excuses, it's too hot, don't want to heat up the house, places to go, people to see...yadda yadda. Each time my family eats out it is a MINIMUM of $25.00. So, I know that we at least eat out once a week...so, instead of eating out, I will give the $25.00 to do God's work.

MENU for JULY 20 - JULY 26

MONDAY - Pork Tenderloin, grilled potatoes, green beans, bread

TUESDAY - BLT's and chips ( I have BUNKO)

WEDNESDAY - Italian Sausage & Peppers with Penne, corn, salad

THURSDAY - Chops with Gravy, mashed potatoes, cornbread

FRIDAY - Black Beans & Beef Burritos, chips and salsa

SATURDAY - Easy Cheeseburger Pie, fresh fruit, peas

SUNDAY - Marinated Ham Steaks, Corn on cob, mac & cheese, bread

Menu Monday on Tuesday (Also a crafty project)



I found a wonderful old frame with a painting on a wood for $2.00. I wasn't that thrilled with the painting, so I made it over.

I turned the gold frame into a pretty blue.

I used BLACK BOARD PAINT from Lowe's and painted

over the painting.

THIS WAS VERY EASY TO DO!!!



It is now our MENU BOARD! It hangs in the dining room.

It just loves hanging out with my $70.00 vintage dining table!
So, each Monday and in this case Tuesday, I can just snap a picture
of our menu and post it!
I am using chalk ink instead of regular chalk because I can't handle anymore
dust in this house than necessary.
Chalk ink doesn't smear either...it is more like a marker that looks like chalk.

Menu Monday

Summer meals take their toll on me...for some reason, it is so much easier to do cool weather meals. So, I am getting back to planning our weekly meals and posting them. I normally plan them anyway, just don't post them...or at least I haven't been. I am hoping dear husband is saving a calf for us to fatten since we sold daughter's show steer.....we are about out of BEEF!!!

MONDAY - Chicken Salad Sandwiches, chips, fresh fruit

TUESDAY - Roast, potatoes, carrots, fresh fruit

WEDNESDAY - Beef fajitas from the leftover roast, refried beans, salsa

THURSDAY - Chicken pot pie

FRIDAY - BLT's, chips, pickles

SATURDAY - HOLIDAY

SUNDAY - Grilled pork steak, pepper poppers, corn on cob, squash patties ( I will do a tutorial for the squash patties and post it)

Ok, I'm trying to get back on track after the holiday. I still have a very hectic week and plan to bring out the trusty crockpot...well, I think mine would be considered more of a roaster....10 qt.

Add green beans and potatoes

WEDNESDAY - BBQ Chicken Legs (crockpot), roasted potatoes, corn

THURSDAY - City Christmas Parade, Annual Catholic Church Spaghetti Dinner

Short week due to ANOTHER and FINAL stockshow of this season.....

MONDAY - Pigs in the blanket....since the high on Monday is not even to reach 60 degrees!!! Homemade french fries smothered in gravy.

TUESDAY - French bread pizza, salad, cinnamon breadsticks

WEDNESDAY - GLOW at church. This is my last week of teaching my class.....I don't know if I will continue with a Christmas project class or not.

THURSDAY - STOCKSHOW

SUNDAY - Tamale pie.....which is a great recipe that includes, beans, meat, ro-tel, taco seasoning, cheese and cornbread.

This week is fairly normal around this house.... 2 meetings in the evening this week that shouldn't interfere with the meals. Sydni has her wisdom teeth out on Thursday, so planning an easy to eat meal that she can suck on for a few days. I hope their removal doesn't affect her ACT scores....ba haaaaa....

MONDAY - 15 bean soup/stew.....don't really know what it is going to be.....I just know I used the 15 bean package, added onions, peppers, ro-tel, potatoes and ground beef.....YUMMY!!!!


TUESDAY - BUNKO NIGHT.....family will have chicken spaghetti and greenbean casserole....I WILL HAVE SOMETHING ELSE!!!


WEDNESDAY - GLOW night.....dinner at church.


THURSDAY - Grilled Hamburgers, homemade french fries, macaroni salad.


FRIDAY - Ham, mashed potatoes, corn, deviled eggs

FRIDAY - Eating at Lone Star Steakhouse because oldest daughter has started working there and this is supposed to be her first night going solo as a waitress.

Menu Monday

It is that time again.....time for the fall fairs/stockshows. I have to plan ahead because we are not home for meals. I try to take as much as I can that is already cooked and try to avoid the concession stand. Of course, there are some nights that look like last week's menu, because we didn't make them last week for some reason or another.

MONDAY - Chicken Salad Sandwiches, Fried Okra, Corn on cob

TUESDAY - Creamed Chicken on Biscuits..(making extra biscuits for Saturday morning) mac & cheese, peaches

WEDNESDAY - Dinner is hosted by our church!

THURSDAY - Sub Sandwiches, chips or leftovers (I will be working the indoor projects at the fair)

FRIDAY - Corndogs (made ahead of time and kept hot then take to the fair), fresh fruit, chips

SATURDAY - Grilled Hamburgers made in advanced and taken to the fair, baked beans, and chips (also taking sausage biscuits for breakfast)

SUNDAY - Oven Fried Chicken, Mashed Potatoes, gravy, green bean casserole, pumpkin pie

MENU MONDAY

This week, I'm using ideas from a new book, Supper's on the Table, Come Home. Rachel Masters includes 13 weeks of meal plans, recipes and grocery lists. I looked through it and didn't really want any ONE week of recipes, but am using several of her recipes.
MONDAY - Shepherd's Pie, salad, lemon squares

TUESDAY - Chicken Fajitas, spanish rice

WEDNESDAY - Dinner at church (Hamburgers, Hot Dogs)

THURSDAY - Oven Fried Chicken, roasted potato salad, corn

FRIDAY - Sloppy Joes, tater tots, peaches

SATURDAY - Creamed Chicken & biscuts, green beans, pineapple

SUNDAY - Church Supper ( I'm not sure what I am making yet)

MENU MONDAY

Some of my menu is going to look familiar since I had it on my menu last week. We ended up not needing as many meals last week due to various schedules, so I am going to make them this week. I am going to add the recipes for this week's menu.

MONDAY - LEFTOVERS

TUESDAY - Sandwiches because we have a meeting.

WEDNESDAY - Baked Potato Soup (click for recipe) Hint, I don't fry the bacon, I just buy the real bacon bits that you put on a salad.....I use a whole BAG of it.

THURSDAY - Mexican Meatloaf, refried beans, salad, chips

I make a regular meatloaf (you can also use taco seasoning in the beef) but add salsa and jalapenos to the mix. Instead of the ketchup/bbq sauce topping, I make spicy queso w/ velveeta and ro-tel....you can also make extra queso for chips or to make the "gravy" for the meatloaf.

FRIDAY - Grilled Hamburgers w/ Pepper Jack cheese melted in the middle, corn on cob, baked beans, deviled eggs

SATURDAY - Lasagna, garlic bread, salad

SUNDAY - Open faced Beef Stroganoff, carrots, crash potatoes (I tried to post the link to pioneer woman's recipe, but the site was down...so, here another post about them)

Beef Stroganoff Recipe:

1 lb. ground beef browned and drained

1 can. cream of mushroom

1 package Lipton onion soup mix

1/2 cup sour cream....or more to taste

Mix cream of mushroom and Lipton onion soup mix w/ ground beef, add 1 to 1 1/2 cans of water.

Let come to a boil, reduce heat and simmer for 15 min.

Add sour cream and mix well.

Serve on toasted buns or bread. 4-5 servings

We are having cooler weather here and it is really putting me in the mood for soups and fall weather. I'm sure that by the time I cook this stuff, it will be back 105 degrees outside. Our public schools are starting back this week which means that dear hubby started today....sigh...well, he works during the summer, it is just a little more relaxed. TUESDAY - (I have a meeting early in the evening) Cheeseburger Macaroni stuff...NOT HAMBURGER HELPER.
WEDNESDAY - Baked Potato Soup
THURSDAY - Roast, potatoes, carrots, rolls, gravy....yummmmmmy!!!
FRIDAY - Red Beans and Rice w/ sausage
SATURDAY - Daughter's 13th birthday...probably eating out.
SUNDAY - Mexican meatloaf, corn, mashed potatoes, gravy, salad
